The cheapest time to get this right is before you open.

Almost everything we are asked to repair in a trading business was decided in the three months before it opened. The name, the branding, the menu architecture, whether anybody local knew it was coming, and whether the paperwork existed on day one. Fixing those afterwards costs several times what it costs to do once, properly, at the start.

The reason it matters more than it sounds

Your rating is judged partly on a track record you will not have yet.

Confidence in management is one of three scored elements, and it is assessed on records kept over time. A new business has none, which is precisely why the habit has to exist from the first week rather than the first inspection.

We are not raising this to alarm anybody. We raise it because it is the single easiest thing to get right at the start and one of the hardest to repair later, and almost nobody is told about it before they open.
